Ghost Kitchens With Kristin Rae and Donovan Muldrow
On episode #27 of Building BN, Patrick speaks with local entrepreneurs Kristin Rae and Donovan Muldrow about ghost kitchens, entrepreneurship in Bloomington-Normal, and launching their newest joint-venture, Eatology — a farm-to-fork, meal prep service, right before a global pandemic.
From the Eatology website:
EATOLOGY crafts upscale menus in collaboration with Illinois farms & chefs. Macro-balanced dishes are created with local, nutrient-dense produce. Our farm-to-fork, meal prep service is ideal for anyone looking to live & eat better.
The meal prep service, which Rae and Muldrow had been collaborating on for two years before launching last Spring, combines the convenience of a meal delivery service with the benefits of both sourcing locally and eating consciously. Rae, describing herself as the business’s ‘customer number one’, says that some of the inspiration for the business came from her own nutritional needs as a busy mom, short on time to meal prep, but still wanting to eat healthy foods.
Said Rae, “I wanted locally sourced products. I wanted things to be macro balanced. I wanted to be prepped and cooked so I could just put it in the microwave.”
Eatology partners with chefs from local favorite, A to Z Catering and Parties, who create and prepare all of the Eatology meals, available for weekly delivery or drive-thru pickup. The menu incorporates ingredients purchased directly from local Illinois farms. The menu is regularly updated to feature in-season produce. Eatology aims to be zero waste, so meals need to be ordered in advance. Orders placed by Friday at 1pm will be available for pick-up or delivery the following Thursday. The service does not have any minimum order and delivery is currently free.
